Exmouth Market’s arboreal brunching spot, Bourne & Hollingsworth, has announced plans to open a new cookery school next year – B&H Kitchen. The group’s exec chef, Adam Gray (formerly of culinary institution Le Manoir aux Quat’ Saisons), will teach pupils expert techniques and enlighten them about seasonal ingredients and recipes.
Situated on the top floor of Bourne & Hollingsworth Buildings in Clerkenwell, B&H Kitchen features six catering stations, a demonstration bench and communal dining table. Join Adam and his head chef Anthony Horn for classes, which are held three times a week and accommodate up to 12 students.
Adam previously owned the Shires Cookery School in Northamptonshire, so he’s an old hand at teaching the tricks of the trade. Learn about everything from seasonal produce to classic and specialised cooking techniques; knife skills to butchery and fish filleting; and bread baking to sausage making.
As well as cookery courses, B&H Kitchen will include food and wine pairing sessions, and even some mixology. The schoolroom will also be used as a Chef’s Table and will be available for private events.
