
Seafood specialist chef Tom Brown will unveil a new restaurant at The Capital hotel in Knightsbridge later this year, returning to the kitchen where he made his London debut a decade ago as head chef for Nathan Outlaw.
Originally from Cornwall, Tom ran the restaurant for two years before leaving to set up his own Cornerstone in Hackney in January 2018. He closed Cornerstone last year, switching his main focus to the Pearly Queen in Spitalfields, where he wins praise for “absolutely stunning” fish and seafood cooking in the 2025 Harden’s guide.
The Capital, close to Harrods, has a long-held reputation as one of London’s leading hotels for dining. The hotel has yet to announce a date for Tom’s return, which he announced this week with a social media post saying:
“Come full circle all the way back to Knightsbridge after starting out my time in London here almost 10 years ago. It’s an iconic venue with a kitchen that some serious legends have been through and I can’t wait to do something really special here.”
