Cabotte

sketch 1Cabotte, a wine-led restaurant celebrating the produce of Burgundy, opens in Gresham Street, in the heart of the City, next Thursday (September 15). It will offer a list of 500 Burgundies and another 100 wines, paired with classic dishes from the region including beef cheek Bourguignon, oeuf meurette and tarte tatin.

It’s the brainchild of star sommeliers Xavier Rousset and Belfast-born Gearoid Devaney, and the kitchen will run by chef Ed Boarland, who trained at the Waterside Inn and was most recently at Le Rafael in Paris.

It hasn’t taken Rousset long to get into his strike as a restaurateur since quitting as a partner at Texture, which he left last year (and where he was responsible for “stunning wine matches”, according to the Harden’s Survey). Less than four months ago he opened his first solo venture, Blandford Comptoir in Marylebone, to wide acclaim.
