New Islington pub with serious grub

A new pub/restaurant with a high-end chef behind the stoves is launching in Islington. The Baring, close to the Regent’s Canal in Baring Street premises formerly known as The Poet, opens its doors on Tuesday.

Sustainability is a major theme for both food and drink, with wines from low-intervention independent makers and a rotating choice of beers with a focus on the spontaneous fermentation process. 

Chef Rob Tecwyn (left in picture) was head chef at Dabbous and has most recently been at Kerridge’s Bar and Grill. He worked with his partner in the new project, manager Adam Symonds, at the Bull and Last in Highgate 10 years ago, before Adam went on to manage Orasay and Six Portland Street.

Rob said: “Opening large, lively restaurants such as Kerridge’s reignited a desire to bring such conviviality back to a more local setting. Adam, I knew, shared the same vision: to bring simple, ingredient-led food, cooked well, to the table.”

The Baring is the latest in a spate of launches in and around Islington, including foodie sports bar Valderrama’s from chef James Cochrane and South Indian specialist Tamil Prince in Barnsbury.
