Tom & Brad do surf & turf

Top chefs Tom Brown and Brad Carter have teamed up to launch a surf-and-turf restaurant – or as they otherwise put it “a traditional steakhouse with a coastal twist” – in King’s Cross. Island opens next week at Mare Street Market in Lewis Cubitt Square.

Tom, who made his name with east London seafood specialists Cornerstone (now closed) and Pearly Queen, will head the surf part of the equation, with the meat under Brad, whose highly rated Carter’s of Mosley in Birmingham closed down last year after 14 years.

Tom launched his latest restaurant just three months ago, Tom Brown at the Capital in Knightsbridge, while Brad’s long-trailed debut in London, Undercroft at St George’s church in Mayfair, foundered just weeks before its launch last year.

Brad said of the new project: “The name is a homage to the islands I have cooked on with Tom throughout our travels, from the rugged British coasts to more tropical shores. The food is proudly local, with a fierce focus on sourcing the best of what the British Isles have to offer.”

Tom added: “Island is about bringing people together over great ingredients, cooked simply. It’s surf and turf fuelled by what we’ve learnt cooking together across actual islands all over the world.”

Island opens next Tuesday, 1 July. It has 90 covers and features green banquettes, wood paneling and a cocktail bar on a mezzanine floor above the dining room.
