
Tom Sellers of London’s Restaurant Story is launching an outpost in Cornwall this summer, taking over the venue near St Ives occupied until last year by Adam Handling’s Ugly Butterfly.
Named Mor, Cornish for ‘sea’, the new restaurant promises a seasonal menu that exploits the region’s best products, including dayboat fish and grass-fed Cornish beef. Tom knows the area well, returning to the scene of his 2019 summer pop-up on the Carbis Bay estate.
He says: “Cornwall has a magic unlike anywhere else in the world. At MOR, I want to capture that sense of wonder, connecting people to the sea, the seasons, and to each other through food, craft and storytelling.”
The estate’s owner, Stephen Baker, added: “We are thrilled to welcome Tom and his team back to Carbis Bay Estate. His 2019 pop-up left such a lasting impression, and it’s incredibly exciting to see the vision, energy, and expertise Tom brings to creating this new, unique restaurant right in the heart of the Estate. Tom’s passion and support for Cornwall’s landscape, produce and growers align perfectly with our own values, and we are excited to begin this new culinary journey together.”
The space has wonderful sea views and has been redesigned by Shayne Brady, inspired by a mix of ‘Japanese Shintoism and Cornish Celtic mysticism’. There will be a raw bar and a charcoal grill, while Tom’s menu will feature items such as Cornish crab with steamed milk buns, nori-wrapped day-boat mackerel escabeche with English wasabi, and a clotted-cream soft-serve ice cream.
