
A smart new steakhouse called Cordelia’s is to open in Mayfair next week, taking over the site in Clarges Street previously occupied by L’Atelier de Joel Robuchon.
Cordelia’s promises a selection of steaks headed by 45-day dry-aged British rib-eye but also featuring interesting cuts from heritage and rare breeds around the world. Galician beef will be among them, plus more unusual Finnish Sashi – a wagyu-style beef produced by cross-breeding Holstein Friesian and Scottish Ayrshire cattle to promote the development of intramuscular fat.
The meat will be cooked over charcoal in an open kitchen run by head chef Jordi Sebastianelli, formerly of Le Petit Beefbar in Chelsea. Also on the menu will be rotisserie chicken, seafood, seasonal vegetables and lighter plates.
At the bar, mixologist Iván Eduardo MartÃnez Mora has developed a cocktail list with a particular focus on tequila and agave. A DJ and live music will add to the atmosphere.
