Team behind Gunpowder reveal more about their new Indian bakery, Custard

Just a week after the announcement of a second Gunpowder – the new restaurant will open at One Tower Bridge later this month – founders Harneet and Devina Baweja have revealed more about their plans to open an Indian bakery and wine bar.

Custard, inspired by the old coffee houses of Kolkata, will also be housed at the One Tower Bridge development (on the ground floor below Gunpowder 2), and is set to launch in September.

The bakery and coffee shop will specialise in sandwiches, pastries, and other snacks from across the Indian subcontinent. Dishes will have European influences, but will focus on savouries from the likes of Mumbai, Calcutta, and Goa.

Expect butter chicken puffs, Bombay sandwiches, Goan pork sausage rolls, and mutton and egg sandwiches. Food will be available to eat in or to take away, while sweets will include almond cherry and ghee cake, and soft serve custard – a popular treat in India.

The old coffee houses of Kolkata were highly social places where people of all backgrounds and cultures would gather to share stories – or simply sit back and enjoy a coffee and a bite to eat. Custard will source its coffee from Ozone in Shoreditch.

Harneet said: “I’ve been aching to launch a bakery for so long. In today’s fast-paced society, we’ve completely lost the art of sitting down together and enjoying each other’s company over something simple but delicious to eat and drink. I aim to bring that back. We’ve got a great location at Tower Bridge and I want to recreate the relaxed atmosphere of the old coffee houses of Kolkata”.

If “fantastic tapas-style dishes” seem “completely authentic, based on family recipes” at other venues from the team, we imagine Indian snacks will hit the spot too.
