Leading Spanish chef Nieves Barragán Mohacho, of Sabor in Mayfair, has unveiled plans to launch a second venue in London with the opening of Legado, meaning ‘legacy’, in Shoreditch High Street this summer.
Sabor, which she founded in 2018, has been the Harden’s guide’s top-ranked Spanish restaurant in London for the past four years. It is also the only restaurant in the country to have registered a rare score of 5-5-5 – the highest possible marks for food, service and ambience – in our UK guide for three consecutive years.
Legado, like Sabor, is backed by the JKS group, and its menus will explore regional cooking from throughout Spain, from Cadiz and Jerez in the south to Galicia on the northwest coast, with stews from Asturias and whole-animal cookery from Castilla y Leon. While Sabor offers guests four separate menus in four settings across its two storeys, Legado is billed as being still bigger.
Nieves says: “It has always been my greatest pleasure to cook food from my country, but there are still many more stories to tell about the dishes and flavours that I haven’t found outside of Spain. Legado is a kind of playground for me, and I am excited to share my memories and discoveries of food and drinks – I hope everyone will enjoy.”
Originally from Bilbao in the Basque Country, Nieves came to prominence as executive chef at Barrafina, which preceeded Sabor as London’s top-ranked Spanish venue.
Legado will open at an as-yet unknown date in Shoreditch’s new Montacute Yards development, where the new Singburi Thai restaurant will be a close neighbour.
