
Former El Bulli chef Rob Roy Cameron next week launches a Basque-inspired restaurant in Soho called Alta, after northern Spain’s Alta Navarra region.
Rob spent 10 years working in Spain and was Albert Adria’s right-hand man for the opening of 41 Degrees – the offshoot of restaurant Tickets – and later at Hoja Santa, both in Barcelona.
At Alta, in Kingly Court, he has put together a menu of sharing plates and dishes from an open grill using mainly top-quality British ingredients in a Basque manner – so escabeche marinating techniques for fish, meat and vegetables incorporate British vinegars and oils, while beef from retired dairy cows is sourced from the Lake District. Good Earth Growers in Cornwall have planted varieties of Spanish peppers exclusively for the restaurant.
Wines are from small European producers using low-intervention and ethical methods, while cider – a preferred Basque tipple – is sourced from with the UK. Sherries and vermouth on tap are from Spain.
Alta is the second opening after Japanese-inspired Moi from the new outfit MAD, launched by Artem Login of the family behind international cafe branch L’Eto.
