Tapas with a British twist in Newbury

Goat on the Roof, a tapas and wine bar championing organic seasonal produce from local suppliers alongside natural and sustainable wines, will open in Newbury, Berkshire, next Tuesday, 3 May.

The new venture is owned and operated by Patrick Vaughan-Fowler, who ran the George & Dragon in nearby Hurstbourne Tarrant for seven years, and head chef Sam May.

Dishes on the menu include native oysters, pickled Stoneycroft cheese, Berkshire asparagus with rosemary-cured lardo, marinated Cornish anchovies, roasted Trealy Farm chorizo, hame and Old Winchester croquettes, and salted caramel tart with malted milk ice cream.

Patrick said: “We’re thrilled to bring this concept to the historic market town of Newbury. We always wanted to produce a menu that truly celebrates the farmers and producers of the UK and heralds an identity of what British cuisine has now become. From fisherman to cheese mongers, local vintners to farmers, Goat on the Roof offers a fresh new take on the bounty of ingredients that we’ve always been lucky to have in the UK.”
