Le vie Parisienne in Leeds – with wines from the Loire

A new neighbourhood bistro with a focus on natural wines is to open in Horsforth on the edge of Leeds next month.

Bavette is the first joint venture from Yorkshire-born chef Sandy Jarvis and his husband, sommelier Clement Cousin (left & right in picture), who met 12 years ago working at London restaurant Terroirs.

Sandy progressed to become managing director of the Culpeper hospitality group in London, while Clement has worked for some of the capital’s most influential restaurants, including The Dairy in Clapham, Simon Rogan’s Fera at Claridges and Naughty Piglets. More recently, he is also involved with Eat Your Greens in Leeds.

Bavette is inspired by the bistros of Paris and will serve a menu of classics such as Pork Belly Rillons, Frisée Salad and Ravigote SauceHalibut with Vin Jaune Sauce & Buttered Leeks and Paris-Brest.

There will be a list of low-intervention wines, including the full range of bottles produced on the family vineyard where Clement grew up in the Loire Valley. His father was an early proponent of natural and biodynamic wines, while his brother and sister are now both involved in the production, working with horses instead of tractors in their commitment to heritage methods.

Bavette launches on Wednesday 21 February.
