Experiential 20-course Japanese restaurant Maru opens

The third generation sushi chef Taiji Maruyama opened Maru in Shepherd Market, Mayfair, on June 15.

Maru is the second restaurant from the team who opened Taka on Marylebone High Street in autumn 2020, and Maruyama will present diners with a “unique, immersive experience, placing a focus on British ingredients prepared through a classical Japanese lens.”

The restaurant serves a 20-course, farm-to-table tasting menu, presented omakase style, to just six guests at a time, each of whom are seated around an intimate maple timber counter. 

An announcement promised the restaurant will showcase the best available ingredients, which are prepared and cooked “in a way that best honours the ingredient and through this, the guest is honoured, thus building on the idea of omotenashi which will be present across all aspects of Maru”. 

Diners will be given the likes of Perigord truffle, Wagyu and caviar, while meat and fish will be sourced seasonally and sustainably. Dishes on the menu might include eight-day dry-aged tuna, Sussex namayasai farm garden salad, and Brixham squid nigiri with Exmoor caviar.

There might also be Cornish spider crab and ten-day dry-aged trout with trout egg sauce.
