Mark Jordan, whose cuisine has always inspired hugely enthusiastic reports in our survey, is to leave the Ocean Restaurant at The Atlantic Hotel in Jersey after almost 14 years. Will Holland will take over as executive chef from October 2017.
Will joins The Atlantic from his position as head chef at Coast Restaurant in Pembrokeshire, Wales. He brings experience in some of the finest establishments across the UK, including La Bécasse, L’Ortolan, Gravetye Manor Hotel and Homewood Park Hotel.
Journeying from coast to coast to join The Atlantic, Will intends to work with local producers to source high-quality ingredients, an approach Ocean Restaurant has long championed in its mission to help put Jersey on the map as a gourmet destination.
Concluding 13 successful years at The Atlantic Hotel, incumbent exec chef Mark Jordan will remain at the helm of Ocean Restaurant until the close of the summer season at the end of October. Will Holland will complete the summer at Coast before joining The Atlantic in October.
