Caines launches Lympstone

Lympstone Manor, the new hotel and restaurant from distinguished chef Michael Caines, who ran the kitchen at Gidleigh Park for 21 years, opens for business on April 3 and is taking bookings now.

Formerly know as Courtlands House, Lympstone Manor is on the Exe estuary near Exmouth, and has been refurbished at a cost of more than £7million.

It has 21 bedrooms and three dining rooms, with its own vineyard to be established. The first fruit is expected in four years with a further period of maturation required to produce wine – an indication of Caines’s long-term ambition for the venture.

The new venue is by the coast within easy reach of Exeter, where Caines grew up – so in very different Devon scenery to Gidleigh, which is tucked away on remote Dartmoor.

Caines is planning to present signature dishes he created at Gidleigh – described in the Harden’s Survey as “sumptuous” and “pure indulgence” – alongside new dishes he has developed in the year since he left.
