Home-grown produce for new Peterborough venue

Peterborough fine-dining pub the Chubby Castor of the Fitzwilliam Arms is to add a new casual dining venue to its main restaurant. The Yard will focus on seasonal local ingredients, including produce grown on-site in raised beds.

Chef Adebole Adeshine (pictured), who has worked for Gordon Ramsay and Marcus Wareing, took over the Fitzwilliam Arms – part of the Fitzwilliam estate, based at nearby Milton Hall in the parish of Castor – in 2017. The thatched 17th-century stone building had been empty for three years.

He said: “My love of nature and being outdoors has grown since opening The Chubby Castor. I first started growing a small amount of produce myself, in the garden behind the restaurant, shortly after opening, which increased my passion for growing my own ingredients.

At The Yard, 70% of our vegetables and herbs will be homegrown, and we use local suppliers where possible, which means the produce we use is seasonal and has low mileage. We care about the provenance, sourcing and ethics of the ingredients we use, and we believe that food that has been raised correctly, grown responsibly and sourced locally heightens the enjoyment of our guests.
