“Fire and ice and a bit of spice” helps capture the excitement of the “bold flavours of quality ingredients cooked with flair and flare!” at this striking new Asian venue – a late 2024 newcomer, whose chef-patron is the very un-Asian but highly regarded Steven Smith who left behind sleepy village life at the Freemasons at Wiswell to steer this ambitious successor to Musu (backed by the same investors as its predecessor). In essence, its Japanese-fusion cuisine, with various menus from à la carte to omakase: the latter for £65 per person either from the ‘Taste of Kaji’ menu or for a select few at the ‘Theatre of Flames’ chef’s table. Dishes span from sushi, sashimi and skewers to grilled steak, fish and seafood: “interesting and really tasty food”. It’s self consciously vibey, though, and you have to want that (“Even at lunchtime I found the ambience too noisy, couldn’t talk, but it was true to its stated intention – high energy – so I can’t complain”).

Summary

This late 2024 newcomer is set to occupy the same site as Musu (see also) which is undergoing a major refit, expansion and reformatting. Based around grilling techniques and bold dishes, it aims to ‘set the stage for the Musu Collection’s future’ with a ‘vibrant, social dining experience’.

"We had Sashimi, Hardwick lamb & Wild sea bass, Chocolate mousse. Great quality ingredients, bold flavours, cooked with flair and flare) . Even at lunchtime I found the ambiance too noisy, couldn't talk, but it was true to its stated intention - high energy music so I can't complain. "

Evening Standard

William Sitwell reviewed two restaurants from a trip to Manchester, revealing two sides of the city’s “generally fabulous dining scene”. Kaji – directed by chef Steve Smith, formerly of the Ribble Valley’s Freemasons – is a Japanese live-fire venue “manned by a collection of burly lads. It’s all tummies, bald heads, tattoos and heat.”

Sadly, the joint is a travesty of “the noble name of Japanese cuisine”: William was so incensed by the “sickly sweet kimchi ketchup” and “sticky tomato ponzu” that he repeated the adjective “vulgar” in consecutive sentences. Worse still, he said, “Kaji is a Japanese gaff without sake. Which is like opening a British pub in Tokyo and forgetting to put an ale on tap.”
