Ex-Core chef Steven Ellis & pastry-chef wife Ami’s “temple-of-gastronomy-wolf in a comfy-pub-sheep’s clothing” launched two years back and it has a particular focus on local game. The “highly distinctive and skilfully crafted cuisine” (with “venison to the fore”) plus “attentive and courteous service” place it “at the top gastropub level”. NB – while “parking is potentially tricky, one could enjoy a delightful walk in Windsor Great Park before or after a meal here”.

This “lovely little country pub” tucked away on the edge of Windsor Great Park “fits into almost any category – including bar, romantic, spectacular-fine-dining-at-pub-prices, elegant-and-extravagant in display”. Launched in summer 2021 by ex-Core chef Steven Ellis and his pastry chef wife Ami, it mixes well-turned pub classics at lunchtime with more refined, often game-based dishes in the evening – “when you have amazing produce from Windsor Great Park and put it in the hands of fantastic chefs, the result is nothing short of perfection”. Top Tip – “doughnut heaven: the pheasant doughnut with truffle and parmesan custard blows you away!”

“A great new venture from a husband-and-wife team” in an “almost-secret location on a Windsor Great Park walk”. Ex-Core chef Steven Ellis and patisserie chef spouse Ami maybe haven’t heard that good gastropubs are unknown in this neck of the woods. They seem to be bucking the trend with this summer 2021 newcomer. Game is a speciality, with venison bon bons, deer pastrami salad, homemade black pudding and venison chipolatas featuring on early menus – “good, honest tasty food”. “Let’s not keep the secret as the food is spectacular in taste and design!”.

"In the last two years the Bailiwick has become my #TheLloydies Gastro Pub Dining Experience winner and it’s not hard to see why. This firstly has been due to the amazing food created by chef / owner Steven. Then you have top pastry chef / owner Ami with her excellent array of delicious desserts. You also receive the friendliest of service from Liz and her young team. I have to say that after our latest visit it would be very hard for anyone to stop them making it three in a row. I say this because on saturday evening we enjoyed the most amazing Game Tasting Menu. The evening started with the usual friendly welcome from Liz and the team before enjoying a drink at the bar. My wife loved the Clarified Milk Punch while I went for the new spanish Cruzcampo lager now on sale at the pub. We were then escorted to our table and once comfortable we were shown the evening’s Tasting Menu using all the amazing local produce from the Windsor Great Park. There was also the option of a wine pairing so we decided to opt for this as well. The first course was Tea and Snacks featuring a Bone Broth , Rabbit Croquettes with Bacon-naise. The broth was full of flavour and the croquettes were heaven. We enjoyed this along with Bread and homemade Sage and Onion Butter. This was followed by the Game Terrine with pickled heritage carrots and hedgerow ketchup. I have to say this was one of the best terrines I’ve eaten in a very long while. Next to come was the Venison Doughnut with “chilli con carne” , puffed rice and sour cream. This was quite simply stunning. Then things got even better with the next course of Hare Royale Tortellini with lyonnaise onions and sauce soubise that was incredible. We now moved on to the main course which was worthy of being the main dish on any menu. The Stuffed Ballotine of Partridge with truffle gratan , chanterelles , burnt young leek and sauce albufera that was just sublime. Now it was time for Ami and she started with a fabulous pre dessert of Apple Sorbet with sorrel. For dessert she offered us the chance to choose from any of the desserts on all the menus. My wife chose the ‘After Eight’ a dark chocolate delice , peppermint , cocoa nib and mint ice cream. For myself I had to choose the evenings special dessert. The Apple Crumble topped with caramel and served with ice cream and cream. This was easily the best crumble I’ve enjoyed for many years so once again thank you Ami. We finished with a coffee and petit fours to bring to an end a truly amazing dining experience. The food was absolutely incredible , the desserts were delicious , the service was very friendly from all the team. This place really is a must visit and I can’t recommend the Bailiwick Pub highly enough. Whether it’s for a quick bite after a walk round the Windsor Great Park or for lunch or dinner it’s definitely worth popping in. I would also recommend Sunday Lunch where you will enjoy one of the best roasts ever. Thank You Steven , Ami , Liz , Arran and all the team for a fantastic evening and look forward to seeing you all again soon. "
