Summary
“What a superb experience!” – chef Nicholas Friar’s “innovative” experimental cuisine (‘closed-loop’ system, fermentation lab, ultra-seasonal and sustainable), presented in a reclaimed-wood-panelled dining room on the medieval city wall, is “a delight and a surprise – you wouldn’t guess it was a vegan restaurant”. “We sat at the Chef’s Counter – I’d highly recommend it. Food was beautifully presented and delicious, wine pairings worked perfectly, chef and staff were friendly and helpful”. In September 2022, Nicholas announced the temporary closure of the restaurant, and at the end of the month posted a Facebook message saying: “we have decided to close our doors for the current time… we will take this time to work on new projects and to develop a way to reimagine HYPHA in a different time, location and execution… this is not a goodbye but a see you later”.
