Summary
Located in a 2,000-acre estate in the Trossachs, Tom Lewis’s boutique hotel tears up the traditional Scottish rulebook with its very contemporary style. Marysia Paszkowska took over the reins from Tom in 2013, and produces a straightforward but highly accomplished short menu for £70 per head, much of it with food from the Lewises’ farm. (They also run a motel nearby).
