Now at a permanent venue in Finsbury Park with a menu based on crickets farmed near Cambridge, this project from an entomologist and a designer seeks to demonstrate that insects are edible, delicious and good for the planet. A pop-up in Shoreditch in late 2023 proved that the proposition had legs – now it has wings to fly.
