Each year, the guide is re-written from scratch based on this survey (although for the 2021 edition, reviews are little changed from 2020 as no survey could run for that year).

"In a street when even pretty good restaurants often don't last long (too much competition?), Rubedo has managed to stay a while. Which on the basis of our visit is baffling. The menu seemed well crafted and the plating-up professional and creative, but the food was consistently bland. No seasoning on the table and apparently no one tasting what comes out. Frankly, a bit embarrassing."
