The Rib Man – aka Mark Gevaux – is a landmark feature of Brick Lane’s Sunday market, with folks queueing for his BBQ ribs and pork rolls from pigs reared outdoors in Norfolk and Suffolk. Actually, you don’t need to queue: nowadays you can order his meat and trademark ‘Holy Fuck’ and other colourfully named hot sauces online.

“Messy but worthwhile!” – a trip to Mark Gevaux’s acclaimed pitch on Sundays at Brick Lane, for his BBQ ribs and pork rolls from pigs reared outdoors in Norfolk and Suffolk. But the creator of ‘Holy Fuck’ hot sauce suffered an aneurism and underwent surgery in summer 2023 – wishing him all the best for a speedy recovery… not only is he a top bloke, but we all need him back at work…

“East London is where you get the best pork rolls in town” – courtesy of Mark Gevaux, a former butcher who has perfected the art of BBQ baby-back ribs, from pigs reared outdoors in Norfolk and Suffolk, and his own famous ‘Holy Fuck’ sauces. Available only in Brick Lane Market on Sundays (they sell out early) and at West Ham home games.

‘Holy Fuck’ hot sauce is just one of Mark Gevaux’s unique contributions to the London street food scene. His Sunday stall – selling ribs from outdoor-reared pigs sourced from Norfolk and Suffolk farms – has only just, as of September 2021, returned to Brick Lane post-lockdown, but fans know that he also pops up at his beloved West Ham’s home games, and items are available to buy online.
