Selsdon is gaining a sibling to Birch in Cheshunt, set in an 18th-century mansion with foraged fine dining from ex-Typing Room chef Lee Westcott. See also Elodie, the dine-dining option at the same hotel, which also boasts three bars, a spa, a Lido (opening Summer 2023), a 200-acre kitchen garden and a co-working space.
