“Well worth its recent star” – that’s the early intel on this May 2024 newcomer from Newport-born chef Tom Waters, which earned its stripes just eight months after it opened. Occupying a small casual space in Pontcanna, he offers a variety of fixed menus (four-courses for £60 per person, seven for £95, and ten for £125). We’ve accounted in the rating for one report that described “no wow factor”, but most accounts deem it “exceptional in all respects”.

"We recently ate at Gorse expecting a newly Michelin starred destination to be a fantastic dining experience. We were hugely dissapointed. Although the service was good we found the food a huge let down. With the food it was average to poor at best, there was no wow factor at all, everything was just bland and flavours were lost in each dish. We have eaten at a lot of high class places around the world but this was a huge let down. The bread and butter course was the worst we have ever had, the bread itself was flavourless, the butter way to salty. A massive let down. The service was good and the wines okay."
