Harden's says

An ambitious new Italian restaurant from the team behind Brighton’s Salt Room opened in summer 2022, in a revamped 1930s bank, on Marlborough Place near the Brighton Pavilion. The kitchen is run by Sardinian-born Mirella Pau, who is from a restaurant-owning family. and was mentored in London by Angela Hartnett during her four years as head chef at Cafe Murano.

Raz Helalat has a strong track record in these parts (The Salt Room, Burnt Orange in Brighton, Coal Shed) so this new 80-cover Italian in a restored 1930s bank near the Pavilion is worth watching. "Second visit after an uneven first experience in September. This time, both kitchen and front of house were on fine form. In particular, the food was excellent, if Tutto keeps up this standard Brighton will have another Italian to rival Cin Cin. The rear dining room lacks personality, the front bar area is much more lively."

"Brighton’s most frustrating new addition. The first time we went the food was excellent and the service haphazard to the point of being surreal - we had to chase absolutely everything multiple times, but he was very warm and friendly so we forgave them. Then, after the closure, “reset” and reopening, we dined there on a Friday night. Service much better, although still nowhere near the standard of Helalat’s other restaurants. The food was again, good (the lasagna croquettes were one of the most indulgent things I’ve ever eaten - delicious!), but it all came out very quickly and the tagliata was very expensive for its size. So it’s still not quite right. They have apparently shifted the manager of the Salt Room over there to knock it into shape - we’re optimistic."
