This modern boutique hotel dining room which opened in the heart of Britain’s smallest city in 2015 achieved a mixed bag of feedback – albeit mostly positive – in our annual diners’ poll. On the downside, many reports included an element of criticism, and the least well-rated part of the experience is the “very dark dining room” whose artwork is not to all tastes. But on the larger, positive side of the scorecard, no-one rates the food anything less than “good” and most reports say it’s “very good”.

Blas Restaurant is located at Wales' first contemporary art hotel, Twr y Felin, in St Davids, Pembrokeshire. Meaning ‘Taste’ in Welsh – Blas offers a menu influenced by the season and locality, with dishes designed to reflect Wales and its produce. From fresh seafood and fish to Welsh lamb and beef, dishes at Blas are designed to offer diners a true culinary experience.
The menu is varied and thoughtfully designed, with daily changes based on the most available locally sourced and in season ingredients. Head Chef Simon Coe is also passionate about using foraged ingredients, of which there is an abundance in the local hedgerows and on nearby beaches.
Blas Restaurant prides itself on accommodating guests with dietary requirements. We are able to offer dining for gluten free, coeliac, vegetarian, dairy free and vegan diets. Tailor made menus are available to guests with allergies.
Our service style is warm and welcoming. Resident and Non-Resident guests alike are welcome to join us for breakfast, brunch, afternoon tea (24 hours’ notice), lunch and dinner. The wine list features old world wines chosen from Berry Bros & Rudd of London.

The chef
Sam Owen joined the team at Blas Restaurant as Sous Chef in 2016, looking for a new challenge and became Head Chef.
Sam is now leading Blas Restaurant in a fresh direction and he will not only direct the team at Blas, but also manage the entire food offer across the group.
Sam is passionate about creating exciting culinary experiences and has an enthusiasm for ingredients. He will focus the team on flavours and look for opportunities to demonstrate his creative flair, with tasting menus becoming a regular occurrence.
Sam Owen said, “Taking on the position of Head Chef at Blas Restaurant is a really exciting progression for my career and I am really looking forward to developing the menus and team, with a long term aim to achieve three Rosettes and ensure that Blas is widely known as Pembrokeshire’s leading fine dining restaurant.”
