The first joint venture for Allister Barsby and Alice Bussi, who worked together for The Seren Collection in Wales - before that, Allister was head chef at Gidleigh Park and Alice was at The Bath Priory, as sommelier and restaurant manager. They have opened in a small Kent village near Hythe, and aim to use as much local and seasonal produce as possible.

"Third experience of perfection Third visit! First when quite new venue then when they got their first star then today with their recently deserved second star!. All courses of the 8 were superb. Special mention to the mushroom course and the palate cleanser. I can't laud them enough, but frankly every course was exceptional. The presentation and flavours were wonderful too! Cannot criticise any part of this experience. Was it worth 90 minutes of driving. YES YES YES! Does he deserve his second star UNQUESTIONABLY YES."
