This Basque specialist from chef Joe Botham won a national reputation in its nine years at Ramsbottom. He's now moved it to Exhibition, for the former Natural History Museum in Peter Street, where you'll find Txuleton steaks grilled over wood fire, salt cod, bacalao and other dishes from San Sebastian.

This celebration of Basque cuisine in a Lancashire former mill town is a sibling to Levanter a few doors away, and the two “brilliant” venues effectively operate as one, offering diners the option of Hispanic bar-hopping. The wood-fired Pereruela oven allows for larger dishes to be served, such as sirloin on the bone from 10-year-old Galician oxen, to go with the smaller pintxos and tapas.

Levanter’s “brilliant” sibling is nowadays “really two restaurants in one” since they expanded into the adjacent shop and added a ‘comedor’ (dining room) for larger dishes – suckling pig, etc – cooked in the wood-fired Pereruela oven. By most accounts “the original bar half is definitely better” thanks to its “interesting pintxos (some on colourful display along the bar, some to order) and small plates”. The more substantial dishes “can seem to turn out less interesting than they sound”, though, leaving an “overrated” impression with one or two diners.
