Harden's says

And now for something completely, er, different: a crisp restaurant. Scott Davis and David Morris are opening Hipchips, offering freshly cooked gourmet crisps and dips in this Old Compton Street venue in November. They are using five heritage and vintage potato varieties to make crisps - including dessert options - that will be served on a conveyor belt.
