A summer 2025 opening in Notting Hill, showcasing traditional Ukrainian dishes transformed using modern culinary techniques by Dnipro-born chef Eugene Korolev, president of Ukraine’s Bocuse d’Or team who spent 18 months away from the kitchen fighting with his country’s special forces after the Russian invasion. ‘Sino’ is Ukrainian for hay, which is referenced in the decor and used as a flavouring in several dishes.
