Restaurateur Robin Gill (The Dairy) will run this signature restaurant at the new luxury hotel in the former Met Police buildings at Great Scotland Yard, operated by Hyatt’s ‘Unbound Collection’; due to open in late summer 2019, serving "serious flavours in a not-so-serious setting". Chef and Restaurateur Robin Gill (The Dairy, Sorella, Darby’s) will oversee this new dining room – one of four F&B outlets he will help manage (along with partner Alex Harper) within the Great Scotland Yard Hotel built on the site of the Met’s original HQ, just off Trafalgar Square; it’s due to open in late 2019. As well as two bars, there is also ‘The Parlour’, which will be big on afternoon tea.
