Originally from Pembrokeshire, Wales, Tom’s respect and passion for nature, produce and cooking has been a major part of his life from a young age. His earliest memories are of roaming farmers’ markets, foraging in the countryside, and harvesting his mother’s vegetable garden. This love and respect for ingredients and nature from both Tom and partner Lois is the foundation of Tom Simmons, Tower Bridge.


Influenced by both British and French cuisine with an emphasis on his Welsh heritage, Tom has a personal relationship with each hand selected supplier and farmer, ensuring the best possible produce on the plate. 


 “Eating fresh and with the seasons was a way of life for me; much of my childhood was focused around food and nature. I have fond memories of gathering ingredients to cook in my mum’s kitchen. Being surrounded by wonderful produce, and the joy I found in food and sharing it, is what first inspired me to become a chef”

The mezzanine level at Tom Simmons is available for events and parties, whether for special celebrations or a conference over lunch the space offers an event destination which can be tailored to your needs. Set in a rustic yet elegant space, the mezzanine overlooks the vibrant downstairs restaurant and kitchen. For those who are looking for something extra special, Chef Tom is on hand to create a bespoke menu for your party, with paired wines and even cocktails and craft beers.

"I have eaten at Tom Simmons several times since it's opening in the summer, both for work and with friends. I have never found the cooking to be anything less than excellent. The menu is relatively small - something I like - and you can feel that a knowledgeable and thinking palate (if you see what I mean) is behind all the dishes on offer. The cockle popcorn as something to nibble on before the main event is a work of genius. Also the leek butter with the delicious 'craft' bread. Be careful not to fill up before the meal arrives! Service is really friendly and personable, rather than 'international slick', but I prefer that anyway. The wine list (where I am very demanding) is very well chosen and quite sensibly priced. Like the food, the wines have 'soul' and have evidently been put together by someone who cares.....and has similar tastes to me! If you want top notch, intelligent cooking, with interesting combinations, washed down by 'real' wine, in a friendly atmosphere, get thee to Tom Simmons! Chris D"

"Where do I start with a review for this restaurant? It's difficult to know where to begin after such a great overall experience. The dining room is modern and stylish without being over-done, it is a relaxing and sophisticated place to sit and enjoy a meal. The service is pristine, every member of staff moves with a purpose and the whole front of house team works as a fastidious, cohesive and helpful unit. Very polished, very impressive. It is clear from the moment the first plate touched down on our table that this place isn't going to be like one of the many restaurants in London that are forced to close their doors due to offering more style than substance. Tom Simmons delivers both by the bucketload. This restaurant gives customers the whole package, but with the food most certainly front and centre of the dining experience, never letting you forget why you came. This respect for the diner is clearly pivotal to what Tom has built and his passion for delivering the best on the plate sews the whole operation together. Tom Simmons' fashion of cooking is honest and brave, and it shows2 throughout his accomplished menu. The absolute trust in the fine quality of every ingredient that he puts on the plate really shines through. This is not over complicated food just for the sake it, in fact many dishes comprise only a handful of key ingredients, but each is cooked to perfection. This clearly is a chef that believes in both the excellence of his produce and also his own ability get the very best out of these great ingredients in the kitchen. No cheap gimmicks here. It is not just a fantastic meal that Tom Simmons is serving up, it is also a masterclass in real, honest, good food. This, in my mind, is the mark of a true chef. Our recommended wine pairing was fantastic, with the complete wine list being comprehensive yet accessible and all very reasonably priced. Lovers of cheese are also in for a treat, with a well curated selection of British cheeses available for those with the will power to turn down the stunning looking desserts, or the stomach to take on both! It is not hard to see this new restaurant becoming one of London's most desired spots for dinner. The easy to reach location, combined with top notch food and service, all delivered at great prices, will surely put Tom Simmons on the map. Suffice to say I will be back, this has been one of the best dining experiences I have enjoyed in years. Hats off to this ambitious young chef and his team, his superbly executed menu of modern British food coupled with such obvious talent will no doubt take him far. I would soon expect waiting lists for tables here, as this restaurant will undoubtedly establish itself with a first class rating among Londonders and critics in time to come."
