Jay Patel (of Luna and Legare), Roland Home (of Watchhouse) and chef Jack Ellingtham (ex Dusty Knuckle) are the ‘dream team’ behind this September 2026 opening in Bermondsey, whose USP is 1cm thick aerated dough, baked with crisp edges in iron pans. British toppings complete the offering, with options including Hot Sausage (with Fennel Sausage, Pecorino, Ricotta, Chillies, and Calabrian Chilli Honey) and White Potato (with White Sauce, Potatoes, Onions, Fior Di Latte, Scamorza, and Aged Cheddar).
