Owner's description
Morso is a modern community-centred restaurant and bar, serving hand-crafted fresh pasta and small plates of Italian bites alongside innovative Grappa-based cocktails.
We take inspiration from Italian tradition but give all of our dishes a Morso twist. We select fresh, great quality, regional ingredients and let them speak for themselves in our cooking. Our fresh pasta is handmade in-house daily and always served "al dente". Unlike classic Italian restaurants, all of our food is served in small portions allowing our guests to discover a variety of styles in one meal.
On the bar front, we chose Grappa as our champion spirit. Distilled from wine pomace, Grappa is a superlative drink and highly versatile. It can resemble vodka, rum and gin in its younger forms as well as exhibit flavours of scotch, brandy and cognac in its aged versions. We use it in all of our cocktails, revisiting some old classics, alongside our own house-potions.

The chef
Paolo has been inspired by Italian ingredients and international cuisine for over 15 years. He loves taking traditional ingredients and recipes and giving them a modern twist. Having come up the ranks of Carluccio's and Jamie's, he is now determined on making a name for himself.
