There's definitely a new 'thing' in town - and it's a test kitchen. Following in the footsteps of concepts like pop-ups and guest chefs, the more innovative chains are getting in on the act by dedicating branches to test out new menu ideas on the eager public. It's genius - after all, if a dish 'doesn't work', it was only ever a trial anyway, and diners get the X-Factor style satisfaction of voting a dish into obscurity. Wahaca's test kitchen opens in Shoreditch and will feature some of their classic dishes and drinks alongside the new ones.
