Billing itself as a "unique and interactive dining experience going ‘behind the scenes’ of L’Enclume’s kitchen", Aulis has just six seats, is open only on Friday evening and Saturdays, and has one menu, at £150. A veritable 'bucket list' chef's table experience.

“A personal dining experience of excellence and artistry” – you eat perched on one of six stools at the ‘chef’s table’ / development kitchen experience at this famous Lakeland destination, which offers an alternative to the main restaurant for those spending a couple of nights in the village. Unsurprisingly, it only generates limited feedback, but the picture emerges that – even if “the dishes aren’t quite at the standard of those in the restaurant, they are under development so that’s fine!” – and it’s “an unforgettable evening and privilege to see such culinary magic!”
Billed as ‘going behind the scenes’ at L’Enclume – Simon Rogan’s development kitchen is in a similar vein to his Soho operation of the same name, offering a first look at dishes destined for L’Enclume. Reports are relatively few, but rhapsodise over an “amazing and intimate” experience.
Aulis at L'Enclume Restaurant Diner Reviews
"The best private dining experience. Chef Alessandra (ex-Geranium, Copenhagen) and Sommelier Max gave us an evening of understated perfection. A fifteen course sensational journey, with commentary, accompanied by individually matched wines, sake and icecider. Watching Alessandra’s artistry unfold so close up, is an unbelievable privilege."
