Billing itself as a "unique and interactive dining experience going ‘behind the scenes’ of L’Enclume’s kitchen", Aulis has just six seats, is open only on Friday evening and Saturdays, and has one menu, at £150. A veritable 'bucket list' chef's table experience.

“A personal dining experience of excellence and artistry” – you eat perched on one of six stools at the ‘chef’s table’ / development kitchen experience at this famous Lakeland destination, which offers an alternative to the main restaurant for those spending a couple of nights in the village. Unsurprisingly, it only generates limited feedback, but the picture emerges that – even if “the dishes aren’t quite at the standard of those in the restaurant, they are under development so that’s fine!” – and it’s “an unforgettable evening and privilege to see such culinary magic!”
Billed as ‘going behind the scenes’ at L’Enclume – Simon Rogan’s development kitchen is in a similar vein to his Soho operation of the same name, offering a first look at dishes destined for L’Enclume. Reports are relatively few, but rhapsodise over an “amazing and intimate” experience.
