‘Dylan James’s dishes pay homage to the British countryside, and embrace the nature of the seasons’ – well that’s what the website says! – at this “lovely restaurant in a beautiful hotel”: a New Forest destination that started life as a royal hunting lodge and is nowadays a luxurious spa complex. Reports in our annual diners’ poll agree, all of them applauding its attractive, light interior and brasserie food from an all-day menu that’s “carefully cooked, and good value”.

For 33 years we've been curating reviews of the UK's most notable restaurant. In a typical year, diners submit over 50,000 reviews to create the most authoritative restaurant guide in the UK. Inspired by nature, Cambium at Careys Manor Hotel is a creative and enchanting dining experience. Our name is reflective of our love affair with the New Forest and the desire to showcase the rich natural resources abundant in our local area.

Head Chef Dylan James's traditional dishes capture the essence of the local area and embrace the nature of the seasons.

“I like to use local ingredients in a worldly way reinterpreting a dish to take advantage of the local area’s rich natural resources”.

As the UK has become a premier wine producing region, Cambium also boasts one of the biggest collections of English wines in the country, featuring vineyards such as Marlings, Exton Park, Nyetimber and Goring.

The chef

Chef Dylan James steps up to take on Head Chef role at Careys Manor Hotel & SenSpa’s Cambium restaurant, after joining the team as Sous Chef in June 2022.

Dylan trained at Bournemouth and Poole College on the Specialised Chefs Apprenticeship Scholarship which led to him receiving the Royal Academy of Culinary Arts Diploma in Professional
Cookery. On completion of his scholarship Dylan joined the kitchen brigade at the famous The Goring Hotel in London’s Belgravia. Dylan had many memorable moments at The Goring but top of
his list is cooking for Her Majesty the Queen, the Duke and Duchess of Cambridge during their wedding celebrations, being part of the brigade that achieved a Michelin star and of course meeting
Sean-Paul!

After his time at The Goring, Dylan fulfilled a lifelong ambition of working in France and took a role at a restaurant near in Cognac. Dylan says “I had always dreamed of immersing myself into an
authentic French culinary experience. We would go to the market daily and choose produce for the kitchen and then write the menus based on what we had bought. All of service was in French but
fortunately the Head Chef spoke a little English and my French improved too!”

Following a year in France Dylan returned to England, taking the role of Chef de Partie, under esteemed chef Michael Caines at Lympstone Manor before being promoted to Junior Sous Chef.
Then in 2018 Dylan joined the brigade at Careys Manor under Head Chef Alistair Craig. Dylan flourished in his role and within the Careys Manor team. Less than a year after joining he was deservedly promoted to Sous Chef, and is now looking forward to taking on his next challenge as Head Chef.
