Ian Swainson has been announced as the new head chef for The Pass restaurant in Horsham’s South Lodge Hotel. He takes the reins from Matt Gillan (of Great British Menu fame) who spent over a decade in the kitchens of this celebrated dining spot, where “chefs bring your meals to the table, so you can discuss the ingredients and preparation”.
Ian joins The Pass from luxury country house hotel, the Samling, in Cumbria where our reporters have praised his cooking over the last three years for its “panache” (not least the “theatrical 7-course menu gourmand”).
He has also cheffed at L’Ortolan in Shinfield; Seaham Hall in County Durham, Le Becasse in Ludlow (RIP) and Chewton Glen in Hampshire, Ian’s food has been described as modern fine dining that packs real flavour.
The announcement follows confirmation that Matt Gillan will leave The Pass at the end of April following ten years at South Lodge. His future plans are not yet known – watch this space.
