It was big news last year that Michael Wignall, long-time chef at The Latymer in Surrey’s Pennyhill Park, was to leave to take over from Michael Caines at Gidleigh Park in Devon. It is still not known who will fill Wignall’s undoubtedly big shoes – his “fine and complex” cooking helped secure a spot just outside the top 50 (58) for the Latymer in the latest Sunday Times Top 100 UK Restaurants list (powered by Harden’s).
Pennyhill Park however have secured a good place holder in the shape of 2013 MasterChef: The Professionals winner Steven Edwards, who’s former home was another of Exclusive Hotel’s venues, the South Lodge Hotel in Horsham. Edwards will appear as guest chef at The Latymer with his business partner, Josh Stanzl. Together they own and run creative restaurant experience etch, a relaxed fine-dining concept.
Offered as a series of exclusive dates throughout February, the duo will be bringing their love of local seasonal ingredients to The Latymer, having developed a six-course tasting menus specifically for the award-winning Surrey restaurant. The series will run on 5 and 6, 11-14 and 18–20 February 2016. The tasting menus start from £65 per person.
Dishes include: Celeriac cured & flamed line caught mackerel, roast celeriac, pickled celery; coffee glazed duck breast, pressed leg, artichoke puree, roasting juices; fillet & belly of Petworth pork, slow cooked celeriac, mustard and Twineham grange doughnut, crispy kale, broccoli puree, gherkin.
During Valentine’s week special dishes include: Sea trout carpaccio, tartare, oyster beignet, oyster mayo; roast fillet and tail of Sussex beef, leek & potato puree, charred spring onion, and mango pannacotta, passionfruit sorbet, fennel.
