Wahaca beta tests new, more sustainable menu

image004Until 9 June “sociable” Mexican cantina chain Wahaca is inviting guests to try a beta version of its new summer menu. And showing just how sociable it is, Thomasina Miers’s restaurant group has asked diners to feedback their thoughts via twitter and Instagram with the hashtag #BetaEater.

Social media response to the expanded selection of healthy and sustainable Mexican market food will be monitored over the four weeks, and public opinion used t0 determine which dishes make the final cut on Wahaca menus.

Additions include: Broccoli with green goddess dressing and pumpkin seeds and a selection of smoothies like the Green & Lean, made with apple, cucumber, mint & lime. A new Market Treats section delves deeper into Mexico’s street food culture, and includes chorizo & chapulines memela; a small Mexican-style chargrilled pizza topped with Trealy Farm sobrassada, crumbled fresh cheese and sustainable grasshoppers. Empanadas will also make an appearance with fillings of British chorizo & squash or pea,mint & shoots.

The new menu also expands the range of responsibly sourced fish on offer, such as ‘MSC crab stuffed avocados’ and salmon sashimi tostadas on a crispy corn tortilla with crispy onions, avocado and chipotle mayo.
