Heston Blumenthal burst out of Bray - until then home to all of his operations - to open this British restaurant inspired by years of historical research. The resulting menu - a celebration of select British dishes from the 14th century onwards - includes such quirky delights as Meat Fruit, Powdered Duck and Tipsy Cake. Heading up the kitchen is Ashley Palmer-Watts, who brings with him not only his own experience and creativity, but also the benefit of 10 years' experience at the fabled Fat Duck.
