Due South – Brighton

The London Carriage Works – Liverpool

Opened in December 2003, The London Carriage Works already looks likely to set a new benchmark for Liverpool dining. With a theme very loosely based on New York’s Gramercy Tavern, it melds friendly service and fine dining with food best described as ‘modern international’, taking its influences from all over the world.

Cedar Tree – Manchester

Chef patron Hassan Chahine comes from a long line of Lebanese cooks and it’s his simple, understated cooking that has started to make serious waves around Manchester. Guests are treated to an intimate and relaxed dining experience, with a fantastically good value and authentic menu that changes seasonally.

The Falcon – Poulton, Gloucestershire

Owners Robin Couling and Jeremy Lockley set out to “inject a bit of city style into the often dull traditional country pub”. Within a year, The Falcon has started to win praise for its simple, full-flavoured and hearty dishes presented in a traditional English pub setting.

The Crab – Chieveley, Berkshire

David Barnard made quite a name for the Crab & Lobster at Asenby in North Yorkshire, and – after an unsuccessful attempt at early retirement – has popped up again at this intriguingly revamped inn in the heart of racing country. As ever, seafood is a key characteristic of the menu, which is presided over – as it was up North – by chef David Moss.

Jessica's – Edgbaston, Birmingham

Since opening, Jessica’s has – at last! – put Birmingham on the map for fine dining in the UK. Co-proprietor and chef Glynn Purnell combines strong yet complementary flavours, to create a menu that fuses classical French cuisine with the best of modern British food.
