Chefs’ Haitian-themed charity dinner

olia-hercules-4-kris-kirkhamUkrainian-born chef and writer Olia Hercules heads a team of cooks preparing a Haitian-themed dinner to raise funds for ShelterBox at Carousel in Marylebone on Monday November 7.

Shine for ShelterBox is six-week campaign to raise money to provide emergency relief and shelter for communities devastated by natural disasters or political conflict.

Hercules will be joined by chefs Oliver Rowe, Alex Hely-Hutchinson and Peter Harrison to prepare a four-course meal costing £45 a head with a pre-dinner cocktail.

The menu includes pumpkin soup with dumplings; whole grilled Cornish sea-bream with pikliz and grains; cured beef tassot with onion, chocolate & red pepper sauce, and avocado, shrimp & watercress salad, black beans, rice & fried plantain; followed by Haitian rum & vanilla cake with mango & lime syrup and coconut & star anise ice cream.

Carousel resumes its normal service of week-long chef residencies the next night, with dinner by guest chefs from Neukölln restaurant in Berlin.
