With 10 pizza places already in his native US, ‘master pizzaiolo’ Bruno DiFabio has set his sights on London with an outpost in Covent Garden. NY Fold opened on Charing Cross Road today (3 July) and aims to bring authentic New York-style pizza to the capital.

Heaven knows we already have plenty of authentic Italian pizzerias to choose from as Franco Manca and Pizza Pilgrims continue their plans for London domination.

But perhaps DiFabio can bring something new to the pizza scene here? He certainly has the credentials – having won the World Pizza Championships six times. And he says his creations differ to the wood-fired Neapolitan style pies that have flooded the market.

NY Fold dough is made from a two-part fermentation process and aged for 48 hours. The tomato sauce is homemade and packed with 12 herbs and spices, while the mozzarella is a 60-day aged variety from Caserta, Italy.

Try topping combinations like the Big Daddy (fresh spinach, artichoke hearts, garlic, white onion, mozzarella and a touch of lemon), while you enjoy some pizza-making showmanship with Bruno’s hallmark tossing of the dough.
