
It looks as though Pho EC1 – the restaurant specialising in the Vietnamese soup-dish of the same name – is firing up to become a chain, with the recent opening of a second restaurant in Fitzrovia.
In case pho (pronounced “feu”) is a novelty to you, you might like to know that the name refers to the soupy plates which are the national dish of Vietnam, where they are accorded something approaching spiritual significance.
In the US, such has been the intensity of love affair with “the ultimate in cheap, healthy comfort food” (Urban Junkies) that the country now boasts over 1000 pho restaurants.
Sounds as if the Pho people may be on to something…
