
William Drabble, the chef who succeeded Gordon Ramsay at Aubergine, is leaving the Chelsea restaurant after over a decade at the stove, reports caterersearch.com.
Harden’s current edition noted a “sad decline” in standards at Aubergine which became apparent last year. Sadly, this is part of a pattern. Aubergine is one of a number of restaurants in the London Fine Dining Group (LFDG) whose standards, according to our survey, notably declined after the acquisition of the group by John De Stefano in 2007.
Drabble’s departure coincides with that of the LFDG’s marketing and operations director, David Herbert, who left last week. Herbert left “to pursue other business opportunities pursuant to the terms of a confidential settlement agreement”.
