
Following the March opening of their latest restaurant in the Harrods Food Halls, the Galvin brothers recently announced the addition of two restaurants to the empire, both in Edinburgh.
Located within the newly-refurbished Caledonian Waldorf Astoria (currently the Caledonian Hilton), The Pompadour by Galvin will take over the space of the current Pompadour restaurant, with a menu focussed on Scottish produce.
The second restaurant, Galvin Brasserie de Luxe, will be a 140-cover brasserie with a large, central crustacean bar.
Keeping it local, both the head chef (formerly just down the road at No. 1 at The Balmoral), and General Manager (formerly at Restaurant Andrew Fairlie) hail from Scotland.
The Pompadour by Galvin is set to open first in early-autumn, with Galvin Brasserie de Luxe following shortly thereafter.
