Colin Tu, owner of Salvation in Noodles, is bringing a Vietnemese BBQ restaurant to London, inspired by the street food stalls found all over Vietnam; expect skewers cooked on a robata grill, pho and the popular fish sauce chicken wings. MAM is pronounced "mum" and means fermentation in Vietnamese.
