“As we booked for 3 people, we ended up with the place to ourselves. This was our second visit to Aulis and this was every bit as good as the first and in some ways better as we had the full private dining experience!” – Simon Rogan’s ‘development kitchen in the Lakes’ sits next door to L’Enclume and its six seats aim to provide guests with a ‘behind the scenes’ culinary adventure, with insight into the experimental, creative process and partnership with ‘Our Farm’ behind this Lakeland phenomenon. “The best way to do L’Enclume – same food as the restaurant but only 6 of you”, providing “a stunning theatrical experience that takes gastronomic perfection to another level”. It takes place at “a small counter beside the experimental kitchen, with Simon Rogan’s classic seasonal dishes served alongside some ideas they’re still perfecting (oyster custard), with food prepared in front of you by a chatty chef” so “all your questions are answered”. “A personal dining experience of excellence and artistry” – you eat perched on one of six stools at the ‘chef’s table’ / development kitchen experience at this famous Lakeland destination, which offers an alternative to the main restaurant for those spending a couple of nights in the village. Unsurprisingly, it only generates limited feedback, but the picture emerges that – even if “the dishes aren’t quite at the standard of those in the restaurant, they are under development so that’s fine!” – and it’s “an unforgettable evening and privilege to see such culinary magic!”
